On the first day of Christmas, my true love gave to me…Buckeyes, a.k.a. Peanut Butter Balls. This is no lie. I met Hubba-luv in August and for our first Christmas together, he made these while I watched. It was love–true love. I remember this delicacy from childhood. While I hovered at their apron strings, my grandma, mama, and aunts would scurry around the kitchen, making magic–or Buckeyes–same thing really. Once you taste one, you’ll understand.

Ingredients:

1 cup creamy peanut butter

6 T salted butter, softened

1/2 t vanilla extract

2 cups powdered sugar

16 oz semi-sweet chocolate

toothpicks

In a mixing bowl, mix peanut butter, butter, and vanilla extract. Gradually stir in powdered sugar until a  large dough ball forms. Add extra powdered sugar if needed. Cover and refrigerate until ready to make balls. The dough will firm up and be easier to form into smaller balls.

Cover baking sheet with wax paper and place dough balls in rows. If they soften, return to refrigerator to firm up again.

Melt chocolate. Place toothpick in dough ball and dip in chocolate. Hold at an angle and spin to toothpick in your fingers to coat all sides. No need to coat entirely. Return to wax paper. Refrigerate until ready to serve. You can remove toothpicks to serve if you’d like–or not. Be sure to cover or place in air tight container if keeping refrigerated for extended time. Enjoy!
